Cheezy Pizza Crust
Cheezy Pizza Crust
Ingredients:
1 cup warm water
2 teaspoons sugar
1 tablespoon active dry yeast
2 1/2 cups flour
1/2 teaspoon salt
3 tablespoons light olive oil
2 tablespoons whole grain cornmeal for sprinkling pizza pan
1/3 cup grated parmesan cheese
1 1/3 cups pizza sauce
1 1/4 cups mozzarella cheese
Directions:
To make pizza dough, firstly, combine warm water, sugar, and yeast. Then, stir slowly to combine. Set aside for 5 minutes.
Place flour and salt into the Vitamix Dry jug in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 6.
Process until mixture is blended and a hole forms in the center of the ingredients, about 5 seconds.
Stop machine and remove lid plug
Select Variable 1.
Turn machine on and slowly increase speed to Variable 6.
Then add the yeast mixture and 1 tablespoon olive oil through the lid plug opening.
Stop machine and replace lid plug.
Part 2
Select high speed.
Use the On/Off switch to slowly pulse four times.
Stop machine and remove lid.
While dough rests, lightly coat pizza pan with the cornmeal.
Use a wet nylon spatula to scrape the sides of the container, pulling the dough away from the container sides and into the center of the mixture.
Replace lid.
Select high speed.
Use the On/Off switch to slowly pulse five times.
Add additional water, 1 tablespoon at a time, only if dough seems exceptionally dry.
Repeat process four times, scraping the sides of the container until the dough binds together into a soft, elastic mixture.
To aid in removing the dough from the container, turn the machine On and Off five times (this lifts the dough up and away from the blades) and slowly invert the container over a clean work surface, lightly dusted with flour.
Part 3
Cover the dough with a clean, dry kitchen towel or inverted bowl and let rest 15 minutes.
Deflate with the heel of your hands, keeping it round.Then using a rolling pin, roll lightly from the center outward using equal strokes in each direction, lifting and turning the dough 1/4 turn after each stroke.
The final shape should specifically be about 1-inch (2.5 cm) larger than your pan.
Fit it into the pan.
Pinch up a collar around the edge to hold the filling.
In addition, brush dough lightly with 2 Tablespoons olive oil and then sprinkle with Parmesan cheese.
Spoon pizza sauce atop dough, spreading with back of spoon.
Top with any other of your favorite toppings, then sprinkle evenly with mozzarella cheese.
Lastly, bake on the bottom rack of a heated 180° oven for 15 to 18 minutes until bottom crust is lightly browned and cheese is bubbly.

Poppy Seed Dressing Recipe
Ingredients:
1 cup cold water
1/3 cup apple cider vinegar
1 thin onion, peeled and sliced
3/4 cup (150 g) granulated sugar
1 teaspoon dry mustard
1 teaspoon salt
2 tablespoons greek yoghurt
1 tablespoon poppy seeds
Directions:
Place all ingredients into the Vitamix container (except the poppy seeds) in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 1 minute, then reduce speed to Variable 3.
Remove the lid plug.
Add poppy seeds through the lid plug opening.
Continue to blend for 5- 10 more seconds or until desired consistency is reached.
Microwave an additional 2 minutes.
Place in the fridge in an airtight container.

Lemon Parsley Dressing with Cauliflower
Ingredients:
1.4 kg cauliflower, cut into florets
8 tablespoons olive oil
2 cups parsley leaves
1 teaspoon lemon zest
¼ cup (60 ml) fresh lemon juice
Salt and ground black pepper, to taste
Directions:
Preheat oven to 180°C.
Toss cauliflower with 4 tablespoons olive oil. Place on a sheet tray and roast in the oven for 25 to 30 minutes. Remove from the oven and set aside.
Place remaining 4 tablespoons olive oil, parsley, lemon zest, and lemon juice into the Vitamix container in the order listed and secure lid.
Select Variable 8.
Turn machine on and process for 60 seconds or until smooth.
Toss with cauliflower and serve.

Ingredients:
1 and ½ cups apple juice
A small avocado (pitted)
1 large pear (quartered and seeded)
6 dates (pitted and dried)
1 cup ice cubes
Directions:
Place all ingredients into the Vitamix container in the order listed and secure the lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10 then to high.
Blend for one minute or until desired consistency is reached.

Mint Chocolate Ice Cream
Ingredients:
Ice Cream
2 cups fresh coconut meat (about 2 young coconuts)
1 cup raw cashews (soaked 4-6 hours)
1 cup raw almond milk
1 teaspoon vanilla extract
1½ teaspoon peppermint extract
¼ cup + 2 tablespoon raw agave or maple syrup
1 handful of fresh spinach (optional, for color)
Raw Chocolate Chunks
3 tablespoon coconut oil, melted
¼ cup raw cacao powder
2 tablespoon maple syrup
½ teaspoon vanilla extract
Directions:
To make the ice cream base combine all the ingredients in your Vitamix.
Select variable 1 then turn on machine and slowly increase speed to variable 10.
Blend for 1 minute or until very smooth.
Transfer to a shallow container and refrigerate for about 2 hours, until chilled all the way through.
Meanwhile combine all the chocolate chunks ingredients in a small bowl.
Transfer to a shallow container and freeze for 15-25 minutes before removing the chocolate and cutting it into small chunks.
Add the chocolate chunks to the ice cream and mix it. Refrigerate until ready to serve.

Flax and Carrot Crackers
Ingredients:
3 cups of carrot pulp
½ cup flax seeds
1 tablespoon olive oil
1 teaspoon mixed herbs and spices
A pinch of salt
Directions:
Mix all the ingredients in a medium sized bowl.
Spread mixture onto Paraflexx Sheets on an Excalibur Dehydrator tray or onto a solid sheet of a dehydrator like the Ezidri dehydrator and spread evenly.
Dehydrate at 46 degrees celsius for approximately 10-12 hours or until crisp.
Cut into cracker shapes and store in an air-tight container.

Chocolate Hazelnut Spread
Ingredients:
1/2 cup water
4 cups raw hazelnuts
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla extract
2 tablespoons light olive oil
Salt (to taste)
1 cup granulated sugar (optional)
Directions:
Preheat oven to 180°C.
Place hazelnuts in a single layer on a baking sheet.
Toast in the oven until the skins are almost black and the meat is dark brown, about 15 minutes.
Stir the nuts halfway through baking to ensure an even color.
To remove skins, wrap cooled hazelnuts in a clean kitchen towel.
Rub until most of the skins come off.
*If you will be adding the sugar, combine sugar and water in a 3 to 4 cup (720-960 ml) saucepan.
Cover and bring the mixture to a simmer over medium heat.
Remove the lid and wipe down the sides of the pan with a wet pastry brush or a scrunched-up paper towel dipped in water.
Cover and cook for 2 minutes or until the sugar is completely dissolved.
Uncover and cook until the syrup looks like pale amber maple syrup.
Line a baking sheet with foil.
Immediately pour the caramel onto the lined baking sheet.
Tilt the sheet to spread the caramel as thinly as possible.
Let harden completely, about 15 minutes.
Break cooled caramel into small pieces and place into the Vitamix container and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 5.
Blend for 15 seconds. Stop machine and remove lid.
Add the nuts to the Vitamix container and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 1 minute, using the tamper to press the ingredients into the blades.
Stop machine and remove lid to scrape down the sides.
Continue blending until nuts are free flowing.
Add remaining ingredients to the Vitamix container and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 2 minutes using the tamper to press the ingredients into the blades.

Vegan Sour Cream
Ingredients:
1 and 3/4 cups cashews (soaked overnight for 6 to 8 hours)
2 tablespoons apple cider vinegar
Salt (to taste)
1 cup water (add more if required)
Directions:
Drain soaked cashews from the water.
Using your Super Blender, blend cashews with apple cider vinegar and salt for 2 minutes or until you have a thick oily paste.
Slowly add in your water.
Start with just 1/4 a cup and puree for 1 minute, then add the rest of the water and puree for 30 seconds.
If the mixture is too thick slowly add in more water until the desired consistency is reached.
Pour the contents in a bowl and place in the fridge for 30 minutes to an hour.
Mix the contents and serve immediately.

Ingredients:
1/2 cup cashews (soaked for 8 hours or overnight)
1 handful dates
1 tablespoon honey
5 cups/ 1 litre water
1 tablespoon cacao powder
pinch of salt
Directions:
Add all ingredients into a Super Blender and blend for a few minutes or until completely blended.
Strain the milk through a strainer, or through a nut-milk cloth.
Serve immediately.
Note: The milk can be stored in the fridge for up to 3 days.
