Vegan Sour Cream
Ingredients:
1 and 3/4 cups cashews (soaked overnight for 6 to 8 hours)
2 tablespoons apple cider vinegar
Salt (to taste)
1 cup water (add more if required)
Directions:
Drain soaked cashews from the water.
Using your Super Blender, blend cashews with apple cider vinegar and salt for 2 minutes or until you have a thick oily paste.
Slowly add in your water.
Start with just 1/4 a cup and puree for 1 minute, then add the rest of the water and puree for 30 seconds.
If the mixture is too thick slowly add in more water until the desired consistency is reached.
Pour the contents in a bowl and place in the fridge for 30 minutes to an hour.
Mix the contents and serve immediately.

Cashew Milkshake Recipe
Ingredients:
1/2 cup cashews (soaked for 8 hours or overnight)
1 handful dates
1 tablespoon honey
5 cups/ 1 litre water
1 tablespoon cacao powder
pinch of salt
Directions:
Add all ingredients into a Super Blender and blend for a few minutes or until completely blended.
Strain the milk through a strainer, or through a nut-milk cloth.
Serve immediately.
Note: The milk can be stored in the fridge for up to 3 days.

Green Soup Recipe
Ingredients:
2 cups spinach, loosely packed
1/4 cup parsley
2 stalks celery
1/4 cup coriander
1 zucchini, coarsely chopped
Himalayan sea salt (to taste)
1/2 cucumber, peeled
An avocado
2 tablespoons chopped onion
1 jalapeño pepper, seeded & cored
A lime, juiced (can use lemon)
1 and ½ cups water (adjust to desired consistency)
Additional sea salt & black pepper to taste
1/4 cup raw cashews, soaked for 1-3 hours* (optional)
Directions:
Put the spinach and 1 cup water into your Vitamix jug.
Select variable 1 and slowly increase to HIGH.
Slowly add in all the ingredients (by removing the lid plug) and blend until creamy and smooth.
Serve immediately or chill in refrigerator for one hour.

Sour Cream and Onion Sauce
Ingredients:
1 ¼ cup raw cashews (soaked 15-20minutes)
1/3 cup macadamia nuts
½ onions
1 cup organic green onions (chopped)
1 ¼ cup water
1-2 lemons (freshly squeezed)
Himalayan salt ( to taste)
Directions:

Turn the speed dial to HIGH.

Orange and Chocolate Mousse
Ingredients:
2 avocados
2 tablespoons cacao powder
8 dates (pitted)
Juice of 2 oranges + zest for topping
Directions:
Place all the ingredients in a Super Blender and blend till smooth and creamy.
Pour into 2 glasses and enjoy straight away.
For a thicker texture refrigerate for a few hours before serving.

Tasty Fruity Puree Recipe
Ingredients:
½ banana
½ carrot
½ apple – with seeds
1 medium slice pineapple
Directions:
Put all ingredients in a Vitamix Blender.
Lock lid.
Put your blender on Variable 1 then switch on and slowly increase speed to 7.
Blend for 1 minute and serve.

Cashew Peanut Butter
Ingredients:
1 and ½ cups roasted salted peanuts
1 and ½ cups roasted salted cashews
Direction:
Pour nuts into the Vitamix Blender and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10 then to high.
In 1 minute you will hear a high pitched chugging sound.
Once the butter begins to flow freely through the blades, the motor sound will change from a high pitch to a low labouring sound.
Stop the machine.
Store in an airtight container, it can also be frozen for longer storage.
**If using dry roasted nuts, you may need to add good quality oil such as almond oil, begin with 3 tbsp (30ml) and add more if necessary.

Health in a Cup Soup
Ingredients:
1/2 head of cabbage
1/2 spinach
1/2 head of broccoli
2 celery sticks
2 small carrots
1 onion
5 cloves garlic
1 cucumber
1 liter of vegetable broth
Directions:
Slice cabbage and Spinach into strips, since these will be thrown into the blender they do not need to be cut finely. Cut the celery and carrots, cucumber and broccoli into small pieces.
Add all ingredients in the order of the list into your Vitamix Blender, put your variable on 1, switch on the blender and blend for 2 minutes (slowly increase to variable 10).
Add the vegetable broth, season with salt, pepper and green herbs or spices of your choice.
Blend for 3-minutes or steam escapes from the vented lid.
Garnish as desired.

Lemon and Garlic Dressing
Ingredients:
1 lemon – peeled and halved
1/2 teaspoon hot sauce
2 garlic cloves – peeled
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1 teaspoon salt
1/3 cup olive oil (80ml)
Directions:
Place lemon, hot sauce, garlic, paprika and seasonings into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10 then to high.
Blend for 45 seconds to 1 minute, using the tamper to press the ingredients into the blades.
Reduce speed to Variable 7 and remove lid plug.
While the machine is running, slowly pour in oil through lid opening.
Blend for 20 seconds or until the desired consistency is reached.

Vegetable Soup Recipe
Ingredients:
1/4 cup peas fresh or frozen (thawed)
lentils (1/4 cup cooked)
1 large tomato (halved)
fresh onion (half an onion chopped)
1/4 cup celery
green pepper (half of it chopped)
1 vegetarian stock cube (optional)
Salt and pepper to taste
1/2 a teaspoon cayenne pepper or available chili (optional)
Directions:
Place all the ingredients in your Vitamix container in the listed order.
Secure the 2-part lid by locking under tabs.
Turn the speed control lever to High.
Lift the other lever to the ON position and allow the machine to run for 2-3 minutes or until steam escapes through the lid.
