Blue Berry Ginger Ice Cream

Blue Berry Ginger Ice Cream

Ingredients:

2 frozen bananas
1 heaping cup frozen blueberries
1/2 inch fresh ginger
1/4 cup cashews
2 teaspoons lemon juice
2-4 tablespoons almond or hemp milk

Directions:

Blend all ingredients together in a Super Blender.
Slowly add 2 tablespoons of almond milk and use the tamper to try to get the mixture going without adding too much liquid.
If you need the extra two tablespoons, use them, but try blending until a thick consistency is achieved.
Garnish as desired and enjoy.

Carrot Orange Juice Recipe

Carrot Orange Juice Recipe

Ingredients:

4 oranges (peeled and halved)
340 grams Carrot chopped
2 cups ice cubes

Directions:

Place all ingredients into the Vitamix container in the order listed and secure lid. Since oranges have a high water content you do not need to add any additional water unless you want a liquid consistency to your smoothie, if this is the case then you can add water as preferred.  
Plug your Vitamix blender into your wall socket and to start with, select the variable 1.
Turn on and slowly increase speed to variable 10 then to high.
Blend for 1 minute or until desired consistency is reached. For the best results, serve immediately!

Butternut Squash Recipe

Ingredients:

2 cups butternut squash, cubed
3 cups water
1 cup cashews
2 stalks celery
1/4 teaspoon sea salt
1/4 red onion
1/4 lemon with skin
2 teaspoon cinnamon
1 clove garlic

Directions:

Blend until smooth and slightly warm. Add more liquid if needed.
Garnish with sprouts and enjoy.
*Serves 4

Lime and Avocado Soup

Lime and Avocado Soup

Ingredients:

Soup
2 avocados
¾ of a medium cucumber
1 stalk celery
1 Lime (Juice only)
Small handful of fresh coriander
2 teaspoons cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1 teaspoon tamari
1 cup water

Sour cream
1 1/2 cups cashews
2 tablespoons lemon juice
1 teaspoon apple cider vinegar
1 cup water
1/2 teaspoon salt

Directions:

Soup
Blend all ingredients, except the sour cream and chopped chives in a high-speed blender until smooth.
Transfer to a serving bowl and garnish with sour cream and chopped chives.

Sour Cream
Blend all ingredients in a Vitamix Blender.
Add a little extra water one tablespoon at a time if you’re having trouble getting the cashews smooth until desired consistency is reached.
Transfer to a bowl and enjoy.

*Serves 3-4

Raisin Toast with Cinnamon

Raisin Toast with Cinnamon

Ingredients:

2 cups almonds
1 cup sunflower seeds
2 carrots
1 cup ground flax
1/2 cucumber (chopped)
2 handfuls of raisins
1 apple
4 dates plus
1/2 cup water
1 teaspoon cinnamon

Directions:

Part 1

Place sunflower seeds in a blender and pulse until finely chopped.
Place in Bowl.
Place almonds in blender and finely chop.
Place in bowl with sunflower seeds.
Add flax and stir to combine.

Part 2 

Process carrots, cucumber and apple in a Super Blender until you get a puree.
In your Super Blender, blend dates with 1/2 Cup water until liquefied.
You can soak the dates first to soften.
Add to carrot and apple mixture, stir.
Stir wet ingredients into dry.

Part 3

Mix well.
Stir in cinnamon and raisins.
Spread 0.64cm thick on ParaFlexx sheets.
Dehydrate for 1 hour at 62 degrees, reduce heat and continue to dehydrate at 46 degrees for two more hours.

Part 4

Flip mixture on sheets and continue to dehydrate for about 4-6 more hours or until dry but not hard.
This bread should be a little soft.
You can use hazelnut butter to go with or any butter of your choice.

Cashew Sour Cream Recipe

Cashew Sour Cream

Ingredients:

1½ cups raw cashews (rinsed and soaked overnight)
1 tablespoon freshly squeezed lemon juice
½ tablespoon apple cider vinegar
¾ cup warm water
¾ teaspoon sea salt
2 garlic cloves (optional)
⅛ teaspoon white pepper

Directions:

Put the cashews, lemon juice, apple cider vinegar,½ cup water and white pepper in a Super Blender.
Blend on low and increase to medium.
Add ¼ cup water and increase speed to high and blend until smooth with a creamy consistency.

Flax and Carrot Crackers

Flax and Carrot Crackers

Ingredients:

3 cups of carrot pulp
½ cup flax seeds 
1 tablespoon olive oil 
1 teaspoon mixed herbs and spices
A pinch of salt 

Directions:

Mix all the ingredients in a medium sized bowl.
Spread mixture onto Paraflexx Sheets on an Excalibur Dehydrator tray or onto a solid sheet of a dehydrator like the Ezidri dehydrator and spread evenly.
Dehydrate at 46 degrees celsius for approximately 10-12 hours or until crisp.
Cut into cracker shapes and store in an air-tight container.

Pink Smoothie Recipe

Pink Smoothie Recipe

Ingredients:

1 medium banana, frozen
½ large beet, peeled and cut into cubes for easier blending
¼ avocado, peeled and pitted
2 cm fresh root ginger, peeled
1 cup water, depending on desired consistency
1 cup kale or spinach (optional)
Optional sweetener (1 handful dates or 2 tablespoon honey)

Directions:

Place all of the ingredients into your Vitamix in the listed order and select the variable 1.
Slowly increase speed to variable 10 and blend until the smoothie has a soft-serve ‘ice cream’ consistency.
Pour into a glass.
Enjoy!

Chocolate Hazelnut Spread

 Chocolate Hazelnut Spread

Ingredients:

1/2 cup water
4 cups raw hazelnuts
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla extract
2 tablespoons light olive oil
Salt (to taste)
1 cup granulated sugar (optional)

Directions:

Preheat oven to 180°C.
Place hazelnuts in a single layer on a baking sheet.
Toast in the oven until the skins are almost black and the meat is dark brown, about 15 minutes.
Stir the nuts halfway through baking to ensure an even color.
To remove skins, wrap cooled hazelnuts in a clean kitchen towel.
Rub until most of the skins come off.
*If you will be adding the sugar, combine sugar and water in a 3 to 4 cup (720-960 ml) saucepan.
Cover and bring the mixture to a simmer over medium heat.
Remove the lid and wipe down the sides of the pan with a wet pastry brush or a scrunched-up paper towel dipped in water.
Cover and cook for 2 minutes or until the sugar is completely dissolved.
Uncover and cook until the syrup looks like pale amber maple syrup.
Line a baking sheet with foil.
Immediately pour the caramel onto the lined baking sheet.
Tilt the sheet to spread the caramel as thinly as possible.
Let harden completely, about 15 minutes.
Break cooled caramel into small pieces and place into the Vitamix container and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 5.
Blend for 15 seconds. Stop machine and remove lid.
Add the nuts to the Vitamix container and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 1 minute, using the tamper to press the ingredients into the blades.
Stop machine and remove lid to scrape down the sides.
Continue blending until nuts are free flowing.
Add remaining ingredients to the Vitamix container and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 2 minutes using the tamper to press the ingredients into the blades.

Hazelnut Vanilla Latte

Hazelnut and Vanilla Latte

Ingredients:

2 tablespoons creamy hazelnut butter
2 cups warm water
10 pitted dates
1 teaspoon cinnamon
1/2 teaspoon vanilla essence

Directions:

In the listed order add all the ingredients into a Super Blender.
Blend together all ingredients.
Blend for about a minute or so or until completely smooth and the jug is warm to the touch.
Strain the drink through a strainer.
Serve immediately.

Note: If you want a steaming hot latte, boil the strained liquid for up to a minute.
