Peachy Coconut Popsicles

PEACHY COCONUT POPSICLES

Ingredients:

Coconut filling
1 cup unsweetened coconut yogurt
1 cup coconut milk (⅔ of a can)
2 tablespoon unpasteurized honey
2 teaspoon vanilla extract

Peach filling
2 peaches, pitted
1 teaspoon cinnamon

Topping
Shredded coconut (optional)

Directions:

Make the coconut filling:
Place coconut yogurt, coconut milk, honey and vanilla in your blender and blend until smooth. Pour in a separate container and set aside.

Make the peach filling:
Rinse your blender. Add the peaches and cinnamon in the blender and pulse on high until pureed.

Assemble:
Pour the peach puree into the Popsicle moulds (about 2 tablespoon per mould or fill to about ⅓).
Fill up the rest of the mould with the coconut mixture, insert a popsicle stick into each mould and stir gently.
Sprinkle the top part with some coconut shreds and freeze for at least 3-4 hours.
When the popsicles are ready to eat, rinse the moulds under warm water for a few seconds to get them out easily.
Once out, you can dip the popsicle into some more coconut shreds if desired.
Enjoy!

Serves: 10 popsicles

Avocado Coriander Sauce

Avocado Coriander Sauce

Ingredients:

1 large ripe avocado, pitted
½ cup fresh cilantro
1 small garlic clove
Juice of ½ lemon
1½ teaspoon unpasteurized honey
Pinch sea salt
Chili pepper flakes (optional, to taste)

Directions:

Place the avocado, cilantro, garlic, lemon juice, honey, sea salt and chili flakes in your Super Blender and blend until creamy.
Taste and adjust seasoning if needed.
For a non-thick sauce, add 1 or 2 tablespoons warm water and blend again.

Mint Pea Dip Recipe

Mint Pea Dip Recipe

Ingredients:

3 cups fresh or frozen green peas
zest of 1 un-waxed lemon
3 tablespoon lemon juice (½ lemon)
1 large clove garlic
¼ cup packed mint leaves
2 tablespoon extra-virgin olive oil
1-2 tablespoon raw tahini (makes dip creamy)
¼ teaspoon sea salt

Directions:

If using frozen peas, leave out to thaw completely or cook them.
If using raw peas, bring a pot of water to boil, add peas and cook for 2-3 minutes.
Plunge them into an ice bath or very cold water to halt the cooking process. Set aside.
Put whole clove of garlic in a Super Blender and pulse to mince.
Add the remaining ingredients and blend on high to puree.
Store in an airtight container for 3-4 days.

Herb Cream Cheese Recipe

Herb Cream Cheese Recipe

Ingredients:

1 1/2 cup cashews (soaked overnight)
2 lemons (juice only)
1/4 teaspoon salt
2-3 cloves garlic
Finely chopped parsley and basil (handful each or to taste)
3/4 cup water 

Directions:

In a Super Blender, process all the ingredients in a until thoroughly combined.
Spread the herb cheese onto a piece of bread, top with a cucumber, and enjoy!

*Serves 4-6

Cream Cheeze Spread with Crackers

Raw-Crackers

Ingredients:

Spread
2 cups cashews (soaked overnight, rinsed and drained)
¼ to ½ cup water
3 tablespoons lemon juice
1 small clove garlic
1 teaspoon apple cider vinegar
5 tablespoons chopped chives
Salt to taste
Crackers
2 cups almonds (soaked overnight, rinsed and drained)
1 cup roughly chopped broccoli
3 carrots, roughly chopped
1 onion, finely chopped
½ cup ground light flax seed
1 cup water
¼ cup soy sauce
½ teaspoon Himalayan salt
½ teaspoon freshly ground pepper

Directions:

Spread
Place all ingredients except chives in Super Blender and blend on high until smooth.
Crackers
Pulse almonds, broccoli and carrots in your blender until you get a rough meal texture.
Transfer to bowl, stir in onion and ground flax seed.
In a separate bowl stir together water and soy sauce.
Stir into the veggie mixture and let rest 10 minutes before rolling out.
Roll out to 1 cm thick on your Kuto solid tray or non-stick sheet or Ezidri Ultra dehydrator solid sheet.
Dehydrate at 65°C for 1 hour.
Reduce heat to 45°C and dehydrate for 8-12 more hours.
Store in air-tight containers and enjoy within 2-3 weeks.

Vegan Sour Cream

Vegan Sour Cream

Ingredients:

1 and 3/4 cups cashews (soaked overnight for 6 to 8 hours)
2 tablespoons apple cider vinegar
Salt (to taste)
1 cup water (add more if required)

Directions:

Drain soaked cashews from the water.
Using your Super Blender, blend cashews with apple cider vinegar and salt for 2 minutes or until you have a thick oily paste.
Slowly add in your water.
Start with just 1/4 a cup and puree for 1 minute, then add the rest of the water and puree for 30 seconds.
If the mixture is too thick slowly add in more water until the desired consistency is reached.
Pour the contents in a bowl and place in the fridge for 30 minutes to an hour.
Mix the contents and serve immediately.

Cashew Milkshake Recipe

Cashew Milkshake Recipe

Ingredients:

1/2 cup cashews (soaked for 8 hours or overnight)
1 handful dates
1 tablespoon honey
5 cups/ 1 litre water
1 tablespoon cacao powder
pinch of salt

Directions:

Add all ingredients into a Super Blender and blend for a few minutes or until completely blended.
Strain the milk through a strainer, or through a nut-milk cloth.
Serve immediately.
Note: The milk can be stored in the fridge for up to 3 days.

Orange and Chocolate Mousse

Ingredients:

2 avocados
2 tablespoons cacao powder
8 dates (pitted)
Juice of 2 oranges + zest for topping

Directions:

Place all the ingredients in a Super Blender and blend till smooth and creamy.
Pour into 2 glasses and enjoy straight away.
For a thicker texture refrigerate for a few hours before serving.
