Raw Tomato Soup Recipe

Ingredients:

7 ripe tomatoes
1 zucchini
1 yellow or red pepper
10-12 sun-dried tomatoes
¼ purple red onion
2 garlic cloves
2 dates (for a bit of sweetness)
2-3 tablespoons olive oil
1 tablespoon lime or lemon juice
1 teaspoon of your favorite seasoning or sea salt
1 cup chilled water
½ – 1 small red chili (for spicy taste)
leaves of 6 stalks of parsley

Directions:

Cut tomatoes in halves and puree for about 40-50 seconds in a Vitamix Blender.
Place the remaining ingredients in the blender (excluding chili and parsley) and pulse until smooth.
Add chili (if using) and parsley and pulse until they are finely chopped.
Refrigerate for 10-15 minutes, if you prefer your soup chilled, or serve immediately.

Zucchini Crackers

Ingredients:

2½ cups walnuts
2½ cups peeled cubed zucchini
½ cup ground golden flax seed
¼ cup hemp or sesame seed
2 teaspoons Himalayan salt (less if using fine Celtic sea salt)

Directions:

In a Super blender, grind the walnuts into crumbs.
Transfer contents to a bowl.
Grind the zucchini into small bits. (Do NOT process into a puree! Keep texture.)
Add zucchini to the walnuts.  Stir in the flax, hemp, salt, and water (½-¾ cup).
Add enough water to create a thick, spreadable mixture.
Spread evenly on Solid sheets.
Dehydrate at 65 degrees celsius for 3 hours.
Turn the temperature to 46 degrees celsius and continue dehydrating for 8-12 hours.
Store in an airtight container.
