Green Soup Recipe

Ingredients:

2 cups spinach, loosely packed
2 stalks celery
1/4 cup coriander
1/4 cup parsley
1 zucchini, coarsely chopped
1/2 cucumber, peeled
1 avocado
2 tablespoons chopped onion
1 jalapeño pepper, seeded & cored
1 lime, juiced (can use lemon)
1 and ½ cups water (adjust to desired consistency)
Himalayan sea salt (to taste)
1/4 cup raw cashews, soaked for 1-3 hours* (optional)
Additional sea salt & black pepper to taste

Directions:

Put the spinach and 1 cup water into your Vitamix jug.
Select variable 1 and slowly increase to HIGH.
Slowly add in all the ingredients (by removing the lid plug) and blend until creamy and smooth.
Serve immediately or chill in refrigerator for one hour.

Celery is known to have the least amount of calories while being able to reduce inflammation, reduce stress levels due to the magnesium content, regulate acidity in the body, improve digestion due to the water content and supply your body with natural salt as it contains sodium.
