Health in a Cup Soup

Ingredients:

1/2 head of cabbage
1/2 spinach
1/2 head of broccoli
2 celery sticks
2 small carrots
1 onion
5 cloves garlic
1 cucumber
1 liter of vegetable broth

Directions:

Slice cabbage and Spinach into strips, since these will be thrown into the blender they do not need to be cut finely. Cut the celery and carrots, cucumber and broccoli into small pieces.
Add all ingredients in the order of the list into your Vitamix Blender, put your variable on 1, switch on the blender and blend for 2 minutes (slowly increase to variable 10).
Add the vegetable broth, season with salt, pepper and green herbs or spices of your choice.
Blend for 3-minutes or steam escapes from the vented lid.
Garnish as desired.
